This is a great recipe to do with the kids. Grab some cones, a box of cake mix, a container of sprinkles and some ready-made frosting. Or, if you’re daring, you can bake up some starlight yellow cupcakes, and creamy cocoa frosting!
Either way, the kids in your life will love this special treat, and a great project for Valentine’s Day. Just make sure not to fill up the ice cream cones too much, or they’ll ‘explode’ in the oven! Actually, the kids would probably love that even more! You can even use a mini ice cream scooper to top your cakes with frosting!
Starlight Yellow CupCakes
- 1/4 Cup – Butter, Softened
- 3/4 – cups Sugar
- 2 Eggs
- 1/2 Teaspoon – Vanilla
- 3/4 cup milk
- 1 1/8 Cup – all-purpose flour
- 1 3/4 Teaspoons Baking Powder
- 1/2 Teaspoon Salt
Preheat oven to 350 degrees.
In a medium bowl sift together the flour, baking powder and salt. With a mixer, beat together the butter and sugar until creamed. Add eggs one at a time. Add in vanilla. Slowly add dry ingredients to butter mixture while alternating in the milk. Mix until combined, scraping sides and bottom of bowl.
For confetti cakes in a cone, stir in about 1/2 cup sprinkles. Put flat bottomed ice cream cones in muffin tins. Fill about 1/2 way with cake batter. Don’t fill past the handle part of the cone. Bake for about 17 to 22 minutes or until cake tester comes out clean. Allow to cool before frosting.
Creamy Cocoa Frosting
- 1/3 Cup Butter, room temperature
- 1/3 Cup Cocoa
- 2 Cups Powdered Sugar
- 1 ½ tsp (teaspoons) Vanilla
- 2 TBSP (Tablespoons) Milk
Mix butter until fluffy. Mix in cocoa. Mix Vanilla and Milk together in small bowl. Add milk mixture and powdered sugar. Beat mixture at high speed for one minute.








This recipe is awesome and pretty fun. My children made something similar at Young Chef Academy here in Texas. They loved it!!!
