The snow was expected, and I woke up to this beautiful flaming red sky. I wanted to cook up something hearty and delicious, something that would make the whole house smell amazing. This dinner did just that! It’s really simple for anyone to make this. I hope you give it a try!
Ingredients:
- 3 to 4 pound pork loin
- 2 Tablespoons Olive Oil
- 1 Tablespoon dried onion
- 1 Tablespoon minced garlic
- 1 pound bacon (I used turkey)
Directions:
Preheat oven to 375 degrees. In a small prep bowl, mix oil, onion and garlic. Feel free to use as much seasoning as you like, or add extra ones in here-get creative! On a clean work surface rub pork loin with oil and seasonings. Place loin on a broiler pan. Wrap with bacon. If you are using pork bacon you’ll want to over lap the layers as they shrink up a great deal while roasting. Place the loin in the lower third of your oven. Roast until an instant read thermometer reads 150 degrees. This could take about 1 1/4 hours. Remove from oven, and cover your roast with aluminum foil for about 15 minutes. Carve and enjoy!







If you like garlic, stud the meat with garlic cloves before wrapping. Delish!
