Do you ever wonder why things are the way they are even when they make absolutely no good sense. For instance, why do I run into the same few people over and over? I work from home, well, ok, from My Guy’s home-at his apartment complex. I have irregular, flexible hours, so you’d think I’d see all kinds of different people milling around this huge apartment complex all the time. Yet, I run into the same two random people night and day. There are literally hundreds of people here, yet the two people who’s names I don’t know, I run into all of the time. The one guy, is very nice, probably close to 50 and quite handsome. One day we met in the elevator and I couldn’t help but notice that he had on gold sneakers. When I say gold, I mean bright, shiny metallic gold sneakers! What?! So, of course he’s now called, Gold Shoes. I even see him at the gym, 5 miles away from here. The other woman I run into quite often, we call The Body. Simply because she has a fabulous figure. But, I see her everywhere. And, I just ran into her, yet again in the elevator!
Something else I wonder about is why is Tomato’s bowl always cloudy? This makes my Guy crazy! Like why is it impossible for the normal civilian to keep a fish bowl clean? Oh, in case you didn’t get that, my fish’s name is Tomato. And, why am I always so scared that Tomato is going to die? I’m almost always in shock that he’s still alive. I don’t even care that his bowl is cloudy, and actually, I don’t think he cares either. I’m just thrilled that he’s still swimming around happy!
And, one more thing I wonder about sometimes. Why am I still best friends with this crazy wild woman? We’ve known each other since we were sixteen and we’ve basically got nothing in common. We’re quite simply best friends. There’s no rhyme or reason to it. It just is. Anyway, it was Trisha’s well, I’ll just say, it was a big birthday. I won’t say what number, cause that’s just mean! My best friend deserves a giant party. She’s the type of gal who, if she loves you, she loves you something fierce. She’s a loyal, smart and very dedicated woman. And I’m very lucky to have her. We danced all night, ate lots of lovely food, and of course drank lots of lovely wine. But, it was a big bash and for her present, I made these Spiced Wedding Cookies for the guests, as party favors. This is the perfect fall cookie.
Spiced Mexican Wedding Cookies
1/2 cup (1 stick) unsalted butter, room temperature
1 cup powdered sugar
1 teaspoon pure vanilla extract
1 cup all purpose flour
3/4 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1/4 teaspoon ground cloves
1/4 teaspoon salt
1/2 cup ground almonds, pecans or walnuts
An extra cup or so of powdered sugar for rolling the cookies in later.
Preheat oven to 350° F. Line a cookie sheet with parchment or silpat liners.
In a small bowl combine remaining powdered sugar and remaining 1/4 teaspoon ground cinnamon. You can also add any of the other spices (you used in the recipe) you’d like to the powdered sugar. Set aside.
Cream the butter and 1 cup powdered sugar until smooth. Beat in the vanilla. Gradually add the flour, 1/2 teaspoon ground cinnamon, cardamom, cloves and salt. Add the ground nuts and stir until well-blended. Form into little balls. Maybe one inch big. Make them what ever size you please. Just try to make them all about even sized.
Place the balls on the baking sheet about 2 inches apart from each other. Bake the cookies for about 13 minutes.
Remove from oven and let them sit on the pan for about 2 minutes. Let them cool on a cooling rack for about 3 minutes or so. Gently roll them in the powdered sugar mixture. If the cookies are too hot, the powdered sugar might crumble up a bit. So, you might have to experiment with the right temperature. You want there to be a nice light dusting on the cookies. That’s ideal at least.
Let them finish cooling and devour. I mean enjoy.
